Here is a tasty and healthy snack recipe made from corn.





Corn Bhel





Preparation Time: 15 mins

Cooking Time: 5 mins

Makes 4 servings





Ingredients



• 1 ½ cups boiled tender corn kernels

• 2 medium cubed and boiled potatoes

• 1 tsp cumin seeds

• ½ cup grated carrot

• ½ cup chopped onions

• 1 to 2 chopped green chillies ,

• a pinch of asafoetida

• ½ cup chopped tomatoes

• ½ tbsp lemon juice

• 2 tbsp chopped coriander

• 1 tsp sugar

• 1 tsp oil

• salt to taste



For The Garnish



2 tbsp chopped coriander



Method





1. Heat the oil in a non-stick pan, add the cumin seeds and allow them to crackle.

2. Add the onions, green chillies, asafoetida and sauté for 2 to 3 minutes, till the onions are translucent.

3. Add the tomatoes, corn, potatoes, grated carrot, lemon juice, coriander, sugar and salt and mix well.

4. Garnish with the coriander and serve immediately.
