Rich in potassium, this healthy soup is a perfect entrée for hypertensive individuals who want to keep their blood pressure in check.

Makes 4 servings
Ingredients:
Yellow moong dal - 3 tablespoons
Onion (chopped) - 1 cup
Carrot Chopped in Cubes - ¼ cup
Garlic Chopped - ½ tsp
Celery Chopped - 2 tablespoon
Turmeric - ¼ teaspoon
Barley - 2 tablespoons
Corn flour - 1 tablespoon
Black Pepper powder - To taste
Salt - To taste
Fresh coriander to garnish
Method:
• Wash and soak the moong dal for 3-4 hours
• Drain the water from the dal
• Add 3 cups of water, ½ cup of onion, carrot and pressure cook it for 2 whistles
• Cool the dal mixture
• Puree the cooled dal mixture in a mixer till smooth
• Now heat oil in a non stick pan
• Sauté the remaining onions, garlic and celery for a minute
• Add the dal puree and bring it to a boil
• Add ¼ tsp of turmeric, cooked barley, salt and pepper
• Mix 1 tablespoon of corn flour in 1/2 cup water and add it to the soup
• Cook for another 3-4 minutes
• Garnish with fresh coriander and serve hot
Tip: Use the water used to cook barley, as it is rich in antioxidants and is good for you.
