Spinach Cucumber Soup

Ingredients:

Butter- 1/2 tbsp

Cucumber- 1/4 cup, chopped

Spinach- 1/4 cup, chopped

Vegetable Stock- 1/2 cup

Milk- 1/4 cup

Yoghurt- 1/8 cup

Salt- To taste

Method:

  1. Melt butter over medium heat. Add cucumber and sauté for 10 minutes or until lightly browned.
  2. Add stock and bring to a boil.
  3. Cover, reduce heat, and simmer for 15 minutes.
  4. Add spinach and bring to a boil. Cover, reduce heat, and simmer for 2 minutes.
  5. Blend this mixture in a mixer until smooth.
  6. Add yogurt, milk, and salt. Serve at room temperature.
