Kambu koozh is a traditional tamil dish made from pearl millet or bajra and buttermilk. It is usually stored in large mud pots and popularly served during summers to keep your body cool and refreshing. It is rich in protein, vitamin E, B- complex, calcium and iron. kambu koozh is not only nutritious but is also rich in fiber and is an excellent summer drink especially for diabetics.
Here is the traditional recipe of Kambu Koozh

Servings: 2
Ingredients:
• ½ cup Bajra (Kambu)
• 2 cups water
• ½ cup curd
• Salt to taste
Method:
• Soak the bajra in water for half an hour
• Rinse it well and drain the water
• Grind it coarsely in the mixer and keep it overnight for at least 6 hours
• In a vessel, add bajra, one cup of water and mix well
• Cook on medium flame for 5-10 mins stirring continuously
• Add more water if required and cook till it is evenly cooked and is thick enough to roll into balls
• Let it cool a little for few minutes and then make the balls
• You can refrigerate the balls to be used later
• To make kambu koozh, place a ball of kambu in a bowl containing water
• Add curd and salt and whisk it
• Store it in earthen pots or a fridge
• Serve cold with raw onion, coriander or pickle of your choice
